Shambala Leaves - a spice used in both cooking and medicine. It is added to salads, soups, sauces, main courses, and eaten on its own, like spinach. The dried and ground green top of fenugreek, also known as utkho-suneli seasoning, perfectly complements vegetarian dishes, soups, gravies, potato and mushroom dishes.

It has a strong, sweetish and slightly bitter taste and aroma, somewhat reminiscent of burnt sugar. It gives a nutty flavor to dishes, so in some vegetable dishes, instead of Shambala, you can add slightly roasted and crushed hazelnuts.
